In cold weather, raclette is certainly a gourmet's favorite dish. Convivial, generous and simple to prepare, the Swiss emblem warms hearts.
Faced with the stall of your cheese-maker, the magic ingredient comes in a multitude of possibilities. Whether you are more traditional (Raclette du Valais AOP, Raclette de Savoie, Morbier...) or curious (Gouda with truffles, Sablé de Wissant, Cheddar Guinness...) choose carefully the bottle that will accompany all youryummy moments.
Raclette loves wine. White, a lot. Red, a little. The perfect match depends on the range of tastes that make up your table.
First of all, the cheese. When melted, your main ingredient reveals an enveloping, unctuous mouthfeel. The nature of the cheese will add a little confetti to the palate, of course! In any case, a wine with a nice freshness will contrast with the fat of the main ingredient.
And potatoes, of course! It tends to soften the whole. Here too, the wine's acidity balances the pairing.
So, what are the best combinations of Alsace wines with a raclette?
Many Alsace wines go brilliantly with raclette. Opt for a dry, fresh, delicate white wine. Moderate flavors and chewiness will accompany the cheese without over powering it. Our Sylvaner Duttenberg, Pinot Blanc Barriques and Riesling A are all good ways to toast with flair.
Grands Crus are generally made from one of the region's 4 noble grape varieties: Riesling, Pinot Gris, Gewurztraminer or Muscat. The delicate aromas of the first two varieties are - in our opinion - best served with raclette.
Generally recognized for their intense mineral character, the choice of an Alsace Grand Cru wine with a raclette can be most successful with a goat's cheese. Opt for the elegance of our Riesling Grand Cru Moenchberg and surprise your guests!
If you're serving a meal with a farandole of charcuterie, make an infidelity to white wine, and opt for an Alsace red wine with a raclette. Charcuterie adds a salty, even full-bodied touch. Here, too, the wine's acidity should be pronounced, to contrast with the fat of the cheese. Pleasantly fruity, and accentuated by a nice freshness, our Pinot Noir will nicely accompany a platter of cold meats. Lovers of smoked or peppered cheeses will not be outdone.
How about a sweet Alsace wine with a raclette? A real Alsatian nugget, the Vendanges Tardives are known and appreciated for their opulent and mellow character. Their aromas of candied apricots, peach pie and honey make your taste buds sing.
With a melted blue cheese, opt for our Gewurztraminer Vendanges Tardives. The slightly spicy taste of the cheese meets the aromas of the grape variety with ardor. The particularly silky mouthfeel will delight lovers of sweet-savory combinations.
